When purchasing beef in bulk, understanding how pricing works is essential. At Lake Audy Meats, our pricing is based on the "hot hanging weight," which refers to the weight of the carcass before it undergoes the dry-aging process and before bones, fat, and other excess material are removed. Typically, this weight reduces by 30% to 40% during processing, resulting in a final yield of approximately 60% to 66% of the hanging weight.

For instance, a steer with a hot hanging weight of 750 pounds would yield between 450 and 500 pounds of high-quality, finished meat once the bones, fat, and trimmings have been removed. This reduction is part of what makes bulk beef purchases so valuable, as you are left with top-tier cuts ready for your freezer.

We offer bulk beef purchase options in quarters, halves, or whole steers. A quarter steer typically yields between 120-150 pounds of meat, a half steer provides around 200-250 pounds, and a whole steer yields approximately 450 pounds. Our careful processing ensures a balanced distribution of cuts: 25% grilling steaks, 30% ground beef, 30% briskets, ribs, and roasts, and 15% stew meat, cutlets, bone broth bones, soup bones, and other assorted cuts.

Choosing a whole steer gives you the flexibility to customize your order with our detailed cut sheet. You can specify your preferred cuts, steak thickness, and even decide whether to include organ meat. Our expert butchers are committed to ensuring your order matches your exact needs.

2) We will send cut sheet and help you fill it out especially if this is your first order,

3) Your animal will be selected and will be dry aged 28 day then cut and wrapped to your specifications, and delivered to your door
